The menu of the restaurant-museum "Krasnaya Ploschad, dom 1"(Red Square, 1) consists of the unique dishes in the accordance with the ancient recipes. According the wishes of our visitors we open that part of our site publishing the original recipe of Olivie salad (1904 )

 

"Olivie" salad ( 1904ã.)

 

Ñàëàò Îëèâüå russian salad

Ingredients (for 6 persons)
Green peas (frozen)– 50g
Potatoes, boiled in their jackets, cooled and peeled – 150g
Camchatka Crabs – 100 g
Partridge white fillet – 150g
Mayonnaise – 120g
Cucumbers fresh – 50 g
Cucumbers marinated – 150g
Veal tonque boiled – 100 g
Capers – 50 g
Hard-boiled eggs– 4
Horse raddish creamy – 40 g
Decoration:
Quail eggs, bolied - 8
Lettuce – 50 g
Black caviar 20 g
Red caviar – 20 g
Crayfish meat - 50g

All ingredients have to be chopped nicely, mixed, seasoned by mayonnaise and horse raddish creamy. Put some salt according to your taste.

Place the salad in the refrigerator for at least four hours so the flavours blend.
